Sunday Morning Breakfast

This photo was actually from Sunday, the 14th (happy belated birthday, "Monkle Matt"). M was helping me make our favorite breakfast, Swedish pancakes. Here's a great recipe (from an old Hanna Andersson catalogue) if you're curious enough to give it a shot:




My Father's (Hanna Andersson's dad) Swedish Pancakes

3 eggs
1 Tbsp. sugar
1/2 tsp. salt
1 1/2 cups milk
1 cup flour
1/4 cup mineral water/club soda
Butter or margarine for pan

Whip eggs thoroughly with the sugar and salt. Add flour, then milk and mineral water/club soda. The mixture should have the consistency of heavy cream so it will be easy to flip. Melt small amount (~ 1/4 tsp.) of butter in a non-stick skillet over medium to medium-high heat. Pour batter (~1/4 cup) into a large skillet and rotate pan to make a thin pancake (like a crepe). Flip when golden brown. Add more butter as needed...every other pancake or so. Yes, butter is yummiest :) Pin It
