I used this recipe from Paula Deen and substituted a few ingredients to create a low-cal version of Key Lime tarts. I think I would change the name to Key Lime Cheesecake Bites, because of the creamy consistency of the "tarts."
Here's what I did:
I used mini vanilla wafers instead of Key Lime Cooler Cookies (we don't have them in any of the markets here), no fat cream cheese, and light whipped cream (not cool whip). I wanted fresh raspberries since they go so well with lime, but they didn't look very appetizing at the grocery store when I needed them. Using these substitutions for each mini cheesecake, the calories were reduced from ~130 calories to ~26 calories...not bad!
