Summer Simplicity

This little salad is probably an acquired taste for some but I really wanted to share it with you because I love how fresh it tastes and how complex the flavors can be with only a few ingredients. I saw an episode of Martha Stewart's show with a similar salad a couple of months ago and really wanted to experiment with the flavors. Here's what I did:

FRESH GRAPEFRUIT FENNEL SALAD


Combine one peeled and sectioned fresh Grapefruit and one thinly sliced fresh fennel bulb (sometimes labeled as anise in the produce section), reserving a pinch or two of the delicate greens for garnish in a medium sized bowl. Drizzle approximately one Tbsp. extra virgin olive oil and 2-3 tsp champagne vinegar over the grapefruit and fennel. Season with kosher salt and freshly ground black pepper. Toss to combine.


The flavors of the fennel and grapefruit work so well together, but if you aren't a grapefruit fan, this dish may not be for you. Myself, on the other hand, I love it!
