FRESH GRAPEFRUIT FENNEL SALAD
Combine one peeled and sectioned fresh Grapefruit and one thinly sliced fresh fennel bulb (sometimes labeled as anise in the produce section), reserving a pinch or two of the delicate greens for garnish in a medium sized bowl. Drizzle approximately one Tbsp. extra virgin olive oil and 2-3 tsp champagne vinegar over the grapefruit and fennel. Season with kosher salt and freshly ground black pepper. Toss to combine.
The flavors of the fennel and grapefruit work so well together, but if you aren't a grapefruit fan, this dish may not be for you. Myself, on the other hand, I love it!Pin It
