You put the lime in the coconut...

After our spring-like weather last week, the weather feels kinda' blah now.  It snowed yesterday, but it was less than an inch.  As far as snowy outdoor activities, this winter has been disappointing.  We can't complain about cold weather though, I swear our average high temperature in January this year must have been near 50°!

Yesterday, Libby and I were listening to the Muppets; which reminded me of a recipe that I had saved on Springpad, Key Lime Coconut Cookies.  Time to be transported to my tropical oasis with these chewy...

Key Lime Coconut Cookies 
adapted from Rock Recipes

INGREDIENTS:
1¾ cup white whole wheat flour
1 cup unbleached all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 cup butter, softened
1½ cups white sugar
1 egg
½ teaspoon vanilla extract
Zest of one large lime, finely minced
¼ cup freshly squeezed key lime juice
½ cup shredded coconut (I used sweetened because that's what I had on hand)
½ cup sugar for rolling cookies
DIRECTIONS:
Preheat oven to 350 degrees. Line cookie sheets with parchment paper.  In a small bowl, stir together flour, baking soda, baking powder and salt. Set aside. Using a mixer, beat together the butter and sugar until smooth and very fluffy.  Beat in egg, vanilla extract, lime juice and lime zest. Gradually blend in the dry ingredients and coconut.  Chill dough for approximately 1 hour (this sets the butter and helps prevent the cookies from flattening out too much).   Roll rounded teaspoonfuls of dough into balls, and roll in sugar. Place on lined cookie sheets about 1½ inches apart.  Bake 8 to 10 minutes in the preheated oven, or until lightly browned.  Let stand on cookie sheet two minutes before removing to cool on wire racks.
